I have been waiting for about a year for Waitrose to get Padron Peppers back in stock. If you’ve never had Padron Peppers then do grab a bag and try them; they’re little green peppers with a mild, ever-so-slightly spicy taste, but one in every twenty or thirty has a serious kick. It’s like Pepper Roulette! You fry them off in a little oil (I use mild olive) and then, when the skins are blistered, pop them in a bowl and season with plenty of Maldon Sea Salt. (Or any salt, but I like the big flaky texture of Maldon!)
The peppers look so pretty as a little tapas dish – you leave them whole, no need to de-stalk or de-seed – and I like to serve them when I do my Mexican feasts! Not authentic, no doubt, but they are too tasty for me to care all that much. Catch them quick – they only stay in stock for a couple of months, then they seem to get rid of them. Maybe if I petition then Waitrose will keep them in permanently!
